Roast Process: Coffee roasting is the art and science of accentuating the unique flavor compounds embedded in each type of coffee. The Roastmaster must have a love affair with roasting coffee to coax the nuances out, yet not overexpose them
 

At A&E Roastery, our goal is to highlight the unique flavor characteristics of each coffee. As the green coffee beans roast, reactions occur within the bean resulting in the creation of approximately 1000 flavors. (A glass of wine has less than 500 flavors.) Our Roastmaster closely monitors each batch for the bean color, sound, and aroma that signal when the best flavor has been achieved. At that point, the beans are drawn out of the roaster and quickly cooled to stop the reaction process.

To achieve the best flavors, A&E Roastery roasts to three levels: Medium, Full City and French.

Medium: a dry brown color that highlights a coffee's brightness, producing a light to medium bodied coffee with a clean finish.

Full City: a medium to dark brown color with a slightly oily surface that highlights a coffee's body and aroma.

French: a very dark brown color with a highly oily surface that highlights a coffee's pungent body and bittersweet, smoky finish.
